Creamy Corn Slaw
Sauce:
1/4 cup Sour Cream, 1/4 cup Mayo, 1 Tbs Yellow Mustard, 2 Tsp White Vinegar, 1 Tsp Sugar, 1/4 Tsp Salt 1/8 Tsp Pepper.
Veggies:
1 17 oz Corn, 2 Carrots Grated, 1 Green Pepper Diced, 1/2 Cup Diced Red Onion
Mix the sauce with the veggies and cover in the fridge for at least an hour – better over night.
My boys really really like the corn slaw. My mom set this out at one of her dinners and it has been a hit at our house ever since. Great for pot lucks! Today we did not have green pepper or red onion – so walla walla whites were substituted. I should have put in some celery or such for a third color.
Pea Salad
I couldn’t find my recipe for Pea Salad tonight – but I put in 1/4 cup mayo, 1/4 cup sour cream, salt, pepper, a half of a diced onion, bag of frozen peas, and a ton of diced cheddar cheese. Not quite 50/50 on peas to cheddar –but it should look close. I saved a piece of bacon from this morning that I will crumble into the salad tomorrow when I set it on the table.
This is a favorite salad of my boys – I don’t quite care for it 100%, but now, after 20 thanksgivings – It’s a tradition to have it on the table. A spoon of pea salad and a spoon of cranberry sauce to make the plate complete
Mamma is going to have a slice of Iceburg Lettuce with Blue Cheese Dressing and slices of Tomatoes. 🙂
